Wednesday: Tomato and bread salad and summer vegetable saute (corn, green beans, and onions) with bread, olive oil, and vinegar.

Thursday: Leftovers, chicken/corn/cilantro salad, marinated zucchini with olives, and tons of watermelon. Later: delicious crenshaw melon.

Friday night I thought we were out of food and did not know what to cook for dinner. I threw together some tomato sauce with eggs and parmesan, snap peas with truffle butter, and bread and olive oil.

Saturday after doing our shopping at the grocery store, I realized I couldn't make any of our recipes as they all needed items from the Sunday morning farmers' market! We had king crab legs with butter (on a great sale), potato salad (with olive oil, mustard, and spring onions), and corn with tarragon butter (tarragon from our balcony!).

Sunday, Enrique made the greatest shrimp po' boys (with spicy remoulade, cabbage and tomato) and we had leftover potato salad and a Mediterranean salad with lemon vinaigrette. Nice salad dressing. Po' boys could have been spicier, though.

Today, I made caprese salad (heirloom tomatoes, skim mozzarella, and basil) and pesto w/ hazelnuts on whole wheat spaghetti. Pretty delicious and tons of olive oil.

Last night's dinner was made in a rush so that Enrique could eat before he went back to the hospital he is working at. I made steamed green beans (didn't even have time to cut the tops off) with homemade truffle butter, and whole wheat linguine with a pecorino-romano, sun-dried tomato, garlic bechamel sauce. It was delicious; I guess not all meals made in a rush are awful.

Dinner, 7/22/2010

Last night for dinner, I made lemony pasta with wilted arugula and zucchini stuffed with goat cheese and mint. The zucchini was okay, but the pasta was pretty delicious: it just needed a rather liberal hand with pecorino-romano cheese.

Dessert: Homemade fresh blueberry pie with yogurt/cream mix on top.
